Well, these are what I call a "happy accident". One day I wanted to make my 2 Ingredient Chocolate Pumpkin Cookies. All it calls for is a can of pumpkin and a cake mix. Duncan Hines has dairy-free cake mixes that work great. I made up the batter, put them in the oven, no problem. But when I went to taste one of my 2 Ingredient Cookies, I noticed that they tasted different. I then realized, I had made 2 Ingredient BROWNIE BITES! Oooooops! I used dairy-free Duncan Hines BROWNIE mix instead of cake mix.
I presented them to my stamping class as "Brownie Bites" and everyone liked them. So I guess they are legit!
All you need is:
1 Box Duncan Hines Brownie Mix (check labels, some versions have dairy)
1 Can Pumpkin (not pumpkin pie filling)
1/2 - 1 Cup Water (optional)
Dairy-Free Chocolate Chips (optional)
Directions:
Mix the ingredients. Sometimes a mixer works better to make sure you have no dry mix clumps. Drop spoonfuls onto a baking sheet. I like to use my melon baller. Bake at 350 until they spring back to the touch.

We've got a birthday party tomorrow so I'm going to try whipping these up tonight to have a safe treat for my little girl (who never got a cake for her 1st birthday so it'd be nice to know anyway)
