Milk-Free & Wheat-Free Mac & Cheese ~ Freezer Lunch

I concocted a macaroni and cheese recipe to play along with Money Saving Mom's Freezer Lunches Series.

My boys are big eaters so these little cups may not be enough, but I can definitely see them eating these along with some dairy-free Hebrew National Hotdogs.  It's starting to feel like we don't even have food allergies around here....mac & cheese is new to us this month!  Thank you, Daiya Cheese!  I also used Daiya Shredded Cheese in our freezer bean burritos. Now back to the recipe.....

INGREDIENTS

3 cups Silk original almond milk

2.5 Tb corn starch

8oz dairy-free Daiya Cheddar Cheese (1 bag)


3 cups of dry Tinkyada rice macaroni

1 tsp sea salt

16 muffin liners

DIRECTIONS

Preheat oven to 350. 

Cook pasta.  Rinse and drain.

In a medium saucepan, start heating 2 cups of dairy-free milk.  Save back 1 cup of milk, and whisk in 2.5 Tb of cornstarch until mixture is smooth.  Slowly add milk and cornstarch to the saucepan of milk. 

Add salt and pepper to saucepan.

Add in 8oz. package of dairy-free Daiya Cheddar Cheese, and stir until melted.

Reduce heat and let cook another 5 minutes until thickened.

Place muffin liners in muffin tin and fill muffin liners with the mac & cheese mixture.

Bake 15 minutes or until golden brown.  Cool before serving.

You can also skip the individual servings and baking...and just serve it up hot out of the pan!  

FREEZING

After baking and cooling, remove mac & cheese from muffin tins.  Place on cookie sheet.  Place in freezer until frozen through.  Then place frozen servings into a freezer bag and seal.  Heat 1-2 minutes in microwave when serving.

Remind me to take these out of the FOIL wrappers when I microwave them, will ya?!

Daiya FB feed sent me here. We've managed dairy and peanut allergies for almost 12 years now, with a host of others thrown in here and there. Daiya was a game-changer for my three girls. We absolutely love Daiya! We make mac&cheese, and there's a recipe somewhere for these little cheese crackers that the kids just snarfed (it didn't even last one day!). When I saw the wedges for the first time at a Safeway near us, I nearly did a cartwheel in the aisle! DS is allergic to wheat and dairy (and soy and eggs and... and...) and the rest of us are all sensitive to dairy in varying degrees.

If anyone is wondering, though the "wedges" look like someone melted the shreds down and poured them into a little square mold, the cheddar version has a different texture - it's almost a bit spreadable (a bit like potted cheddar, I imagine).

I make a very similar mac n cheese with daiya and coconut milk! I find corn/ quinoa pasta holds together better than rice pastas. My son, esp. loves it! As I make it once a week and it takes an entire package, I would LOVE daiya coupons!!

Oh, this is the cutest! Whenever I make mac and cheese with Daiya, we tend to eat the whole pot between the two of us, this may help portion sizes (or not, because wee cups of mac and cheese!).

We have tried the Daiya Cheddar Cheese and love it with making mac and cheese. It melts and is so a bunch of ooowie gooooie scrumptious deliciousness. Have a package of the Mozzarella cheese in the fridge just waiting for me to make Lasagna with. Not quite a creative as M ilk Allergy Mom when it comes to the recipes but lately I have not had the time to. Having recently started eating Vegan this past April I am glad to know that there are chesses that dairy free that I can use for one of my favorite foods, Mac and Cheese!!! Thank You!!!!!!!
