Dairy-Free Brown Sugar Cookies


What do you make for small group when the only thing you can find in the pantry is brown sugar? Brown Sugar Cookies! The vote was that these taste a lot like snicker doodles. :)

  • 1 1/2 sticks (6 ounces) unsalted butter, at room temperature (Fleischmann's Unsalted)
  • 1 1/4 cups dark brown sugar
  • 1 large egg, at room temperature (try 1 tbs. ground flax seed dissolved in 3 tbs. water if you can't do egg)
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground ginger (I left this out)
  • 1/2 teaspoon ground cinnamon

• Preheat the oven to 375°F.

• Place the butter and sugar in the bowl of a mixer fitted with a paddle and beat until smooth and creamy. Add the egg and beat well. Scrape down the sides of the bowl. Place the flour, baking soda, salt, and spices in a separate bowl and mix well. Add to the butter mixture and beat until everything is well incorporated. Scrape down the sides of the bowl and beat again.

• Drop large teaspoonfuls of dough onto an unbuttered cookie sheet about 2 inches apart and bake until the edges are just brown, 8 to 12 minutes. For crispy cookies, let cool on the sheet. Let the cookie sheet cool completely between batches and repeat with the remaining dough.

Every time I have been in the supermarket looking at margerine there always was a small amount of dairy in the ingredient list, though I am not sure that I ever looked at Fleischmans, so that is very helpful knowledge. Thanks - can't wait to taste the cookies.

Did you substitute something for the butter? I must be missing something, I don't see how these are dairy-free.

Fleischmann's Unsalted Margarine is dairy-free. It contains soy as it's margarine, not actually butter. I try to always note that in my recipes, that I'm using the margarine when it calls for butter. Makes baking dairy free a little easier!
