Dairy-Free Broccoli Spinach Soup

We had leftover steamed broccoli and a bag of spinach in the frig, along with tons of homemade chicken broth that needs used. So I made up a soup concoction with those ingredients.

Saute garlic and onion with Fleischmann's Unsalted dairy-free margarine.
Add the spinach and saute.
Add chicken broth and broccoli and heat through until broccoli is tender.


Pour mixture into blender and blend into a creamy soup.
Serve with Daiya shredded cheese on top.


This would be good for St. Patrick's Day, don't ya think?!
